Vegetarian Meat Loaf

Ingredients
- 3 cups boiling water
- Celtic Sea Salt
- 2 cups spelt cous
- 1 tablespoon sesame oil
- 1 large leek or onion, sliced
- 4 cloves of garlic, minced
- 4 carrots, sliced
- 3 stalks of celery, sliced
- 2 teaspoons thyme
- 2 teaspoons sage
- 6 tablespoons miso
- 1cupof walnuts, ground
- 1 cup of spelt flour
- 1 teaspoon chopped parley
- Black pepper
Instructions
- Preheat the oven to 350 degrees. Boil the water and salt in a large stock pot. Add spelt cous. Simmer a few minutes, until the water is absorbed. Transfer hot grain to a bowl and let cool. Heat wok or large skillet. Add sesame oil. Saute garlic and leeks for 2 minutes, add carrots and celery. Saute for 2 minutes. Add herbs, parsley, sugar. Mash in the miso. Mix in the ground walnuts. Mix the spelt flour into the cooked spelt cous. Then add the vegetable mixture to the spelt cous. Mix well. Taste and adjust seasonings. Lightly oil 1quart loaf pan and press mixture into pan. Bake, covered for 60 minutes. Let it cool for 30 minutes before slicing. Serve loaf with vegetable side dishes.
