Vegetable Lasagna

Ingredients
- 3 cups of marinara sauce
- 1 medium zucchini, shredded
- 6 uncooked rice lasagna noodles
- 4 cups of chopped spinach
- ½ teaspoon oregano
- ½ teaspoon rosemary
- ½ teaspoon thyme
- ½ teaspoon savory
- 3 cups of soy cheese
Instructions
- Boil the noodles until limp. Prepare the marinara sauce by heating it in a skillet over medium heat until cooked through. Mix in zucchini. Spread sauce over pan, top with three noodles. Place the spinach next, followed by 2 ups of soy cheese and then the oregano rosemary, thyme and savory. Spread 1 cup of sauce over top. Top with remaining noodles, sauce mixture and cheese. Bake uncovered at 350 degrees in oven until hot and bubbly. About 45 minutes. Let stand 15 minutes before serving.
