Tofu with Bok Choy

Ingredients
- 1 pound of bok choy, cut into 1 inch pieces
- ¾ pound baked tofu, cubed
- 1 tomato, quartered
- ¾ cup of water
- 1 ½ teaspoons fresh ginger, finely chopped
- 1 tablespoon of extra-virgin olive oil
- 1 clove of garlic, minced
- Black pepper
- Celtic Sea Salt
- Tamari to taste
- Parsley for garnish
Instructions
- Preheat oven to 350 degrees. Place ½ inch thick slices of tofu on baking sheet and bake for20 minutes or until tofu is golden yellow in color. Then cube the tofu. Heat the oil in a skillet, add all the ingredients, and stir-fry for 5 minutes. Garnish with parsley and serve with potatoes or rice.
