Sweet Potato Chips with Guacamole

Ingredients
- Sweet Potato Chips
- 2 sweet potatoes, sliced into thin rounds
- ½ cup of extra-virgin olive oil
- Celtic Sea Salt
- Black Pepper
- Guacamole
- 3 ripe avocados
- ¼ cup of lemon juice
- 1 tablespoon ume plum vinegar
- 2 teaspoons nutritional yeast
- 1 tablespoon cumin powder
- ½ teaspoon curry powder
- 1/2 cup of onion chopped
- ½ tomato, chopped
- ½ cup of cilantro, chopped
- 1 clove of garlic, minced
- ½ teaspoon honey
- Celtic Sea Salt
- Black Pepper
Instructions
- Preheat the oven to 425 degrees. Meanwhile, place sliced potatoes in a large plastic bag. Pour in ¼ cup olive oil, seas salt, black pepper. Toss in a bag until evenly coated. Spread potatoes on a baking pan without overlapping and bake until golden brown around edges. Bake 20 minutes and turn potatoes another 20 minutes on the other side. For the guacamole: Mash avocados to a chunky consistency. Gently mix in all the ingredients, season to taste.
