Stuffed Avocado

Ingredients
- 2 medium avocados cut in half and pitted
- Spinach or lettuce leaves
- Marinated vegetables
- 1 teaspoon chopped parsley
- 1 teaspoon chopped basil
- 1 teaspoon chopped thyme
- ½ teaspoon Celtic Sea Salt
Instructions
- Cut ripe avocado in half, peel them with a butter knife or leave them in their skins. Place them on a bed of fresh spinach or leafy lettuce. Stuff each half with fully marinated vegetable and serve as a salad or side dish.
