Ratatouille Soup

Ingredients
- 1 pound of tomatoes, chopped
- 1 onion, chopped
- 1 green pepper, chopped
- 2 cloves of garlic, minced
- 2 bay eaves
- 1 eggplant, chopped
- 1 teaspoon basil
- ½ teaspoon tarragon
- ½ teaspoon savory
- 1 teaspoon marjoram
- ¼ cup chopped parsley
Instructions
- In a soup pot, cook the tomatoes, onion, green pepper, garlic, and bay leaves until almost tender. Add water if too thick. Add the eggplant, spices, and cook until tender. Add the parsley and heat through. Remove the bay leaf before serving, serve hot or cold.
