Pineapple Salsa

Ingredients
- 1 large pineapple, ripe, sliced into ½ inch rounds
- ¾ cup Macadamia nuts, chopped
- ½ cup red bell pepper, diced
- ¼ cup red onion, diced
- 2 tablespoons lime juice
- 2 tablespoons cilantro, minced
- 1 tablespoon cumin powder
- 1 tablespoon mirin
- 1 ½ teaspoons Jalapeno, seeded and diced
- 1 ½ teaspoons garlic, minced
- 1 ½ teaspoon chili powder
- ½ teaspoon Celtic Sea Salt
- ½ teaspoon hot sauce
- Pinch of cayenne pepper
Instructions
- Preheat grill. Skin and cut pineapple into 1/2inch slices and grill, flipping occasionally. Chop into ¼ inch cubes. Place with the remaining ingredients in a large mixing bowl and mix well.
