Joyful Rice Salad

Ingredients
- 1 quart cooked brown rice
- ½ cup of fresh mint
- ½ cup of oregano leaves
- 1 red onion, sliced
- Juice from one lemon
- 5 marinated sun dried tomatoes
- ½ cup of extra-virgin olive oil
- 3 garlic cloves, minced
- ¼ cup of pitted olives
- ¼ cup of capers
- 1 zucchini, sliced in quarters
- Celtic Sea Salt
- Black pepper
Instructions
- Put the rice in a bowl and let it cool. When the rice is room temperature, stir in the other ingredients. Taste and adjust the seasonings as necessary.
