Italian Beans

Ingredients
- 1 pound white pea beans
- 3 tablespoons extra-virgin olive oil
- 2 cups of onion, chopped
- 4 cloves of garlic, minced
- ½ cup chopped sweet pickle
- ½ cup chopped green olives
- 2 cups tomatoes, chopped
- 1 cup of celery, chopped
- 3 teaspoons parsley
- 1 ½ teaspoons Celtic Sea Salt
- 1 teaspoon dill
- 1 teaspoon vegetable broth powder
- 1/2 teaspoon basil
- ¼ teaspoon paprika
- Several dashes of cayenne pepper
Instructions
- While the beans are cooking, heat the oil and saute the onions and garlic on high heat until semi-tender. Then add the pickles, olives, tomatoes, green vegetables and all the seasonings, and simmer on low heat for 20 minutes until the flavors mingle. Preheat the oven to 350 degrees. When the beans are tender, drain them completely and mix the hot beans with the vegetable sauce. Lightly oil 1 large baking pan and spread the bean mixture about 2 ½ inches thick. Bake for 45 minutes.
