Homemade Guacamole
I love avocados!! They are such a nutrient booster. They allow for the body to absorb more fat-soluble nutrients. They also provide over 20 essential nutrients. They contain fiber, Vitamin E and B, and potassium. Did you know that avocado is, in fact, a fruit and that it has more potassium than a banana? It shares the same beneficial monounsaturated fat with olive oil and olives.
Avocados are a staple in Mexican dishes but now have become a favorite American food. Because of its thick skin, avocado does not have as many pesticides. If you want it not to ripen, put it in the fridge. When you are ready for it to ripen faster, put it in a paper bag with an apple or banana for 2-3 days.
I know the frustration when you get a few avocados at the same stage of unripeness and then one day they all just ripen and there is no way to eat them all before they go bad. So hopefully, this will give you more flexibility, and you will be able to enjoy them more often!
So here is one of my favorite recipes for Homemade Guacamole. As always, buy your ingredients organic when possible and rinse your vegetables well.
Washing Tip: Soak your vegetables in 1 tablespoon of Apple cider vinegar and water to help remove any wax or preservatives.
Dipping Tips: peel and slice raw sweet potatoes thin like chips; use brown rice crackers, carrots or celery sticks; make boats out of small lettuce leaves with guacamole on it.
Ingredients
- 2 medium avocados
- ¼ cup diced red onion
- 1 serrano pepper or ½ jalapeno pepper, seeded and minced
- 2 tablespoons chopped fresh cilantro
- Juice of 1 lime
- 1 Roma tomato, seeded and diced
- Celtic Sea Salt
- Pepper
Instructions
- Cut the avocado in half length-wise, rotating your knife around the pits. Separate the halves and remove the pits. With a big spoon, scoop out the flesh and put it into a bowl. Discard the peel. Add the onion, serrano or jalapeno pepper, cilantro, and lime juice, and mash together with a fork, a potato masher, or your very clean hands. Gently fold in the tomato, and season with salt and pepper to taste.
