Greens Soup

Ingredients
- 5 bunches of mixed greens, (spinach, beets, chard, kale, mustard greens about 3 cups cooked)
- 6 green onions, tops only, chopped
- 1 cup of non-dairy milk
- 2 teaspoons maple syrup
- 1 ½ teaspoons Celtic Sea Salt
- 1 teaspoon vegetable broth powder or 1 vegetable bouillon cube
- 3 dashes of powdered ginger
- 1 teaspoon chopped parsley
- 1 teaspoon chopped basil
- 1 teaspoon chopped thyme
Instructions
- Choose firm bright leafy greens. Remove any with blemishes. Wash the greens carefully removing the grit and sand. Leave the stems on the greens and chop lightly. Steam the greens until tender. Blend the cooked greens with all the remaining ingredients. Simmer on medium low heat for about 20 minutes until hot throughout.
