Ingredients
Filling
- 3 pounds tart apples, cored and diced
- 1 ½ cups blueberries
- 3 teaspoons lemon juice
- ¼ cup apple juice concentrate
- 2 tablespoons pure maple syrup
- 1 tablespoon rice four
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1/2 teaspoon apple sauce
- 1 teaspoon vanilla
- 1 tablespoon olive oil
- ½ teaspoon ginger
- ½ teaspoon honey or maple syrup
Topping
- 3 pounds tart apples, cored and diced
- 1 ½ cups blueberries
- 3 teaspoons lemon juice
- ¼ cup apple juice concentrate
- 2 tablespoons pure maple syrup
- 1 tablespoon rice four
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1/2 teaspoon apple sauce
- 1 teaspoon vanilla
- 1 tablespoon olive oil
- ½ teaspoon ginger
- ½ teaspoon honey or maple syrup
Instructions
- Preheat the oven to 375 degrees and grease a baking dish.
- Wash, core and dice the apples into 1 inch chunks and place them in a large bowl.
- Add the blueberries, and sprinkle lemon juice over the mixture.
- Mix in the apple concentrate and maple syrup.
- Sprinkle rice flour, cinnamon, vanilla, ginger, honey/maple syrup over the top of the apple mixture and stir.
- Place apple/blueberry mixture into the baking dish.
- Pour the olive oil over the mixture.
- Mix together remaining ingredients for topping and pour over the top of the apple dish.
- Bake for 35 minutes until top is golden and crisp.
