French Green Bean Soup

Ingredients
- 4 tablespoons vegan butter
- 2 bunches of green onion, chopped
- 1 can of tomatoes
- 4 cups of green beans
- 10 ounces of tomato juice
- ½ teaspoon honey
- ½ cup water
- 2 bay leaves
- 2 tablespoons of tamari
- 2 tablespoons of parsley
- 2 tablespoons of basil
- 1 teaspoon of vegetable broth powder
- Celtic Sea Salt
- Black Pepper
Instructions
- In a medium soup pot, saute the green onions in the vegan butter for 2-3 minutes. Add the tomatoes, juice, beans, bay leaves and water and simmer everything on medium low heat for 30 minutes until the beans are tender. Then add the remaining ingredients and cook everything for an additional 20 minutes so that the flavors can develop.
