Creamy Lentils

Ingredients
- 1 cup of red or yellow lentils
- 1 teaspoon Celtic Sea Salt
- 1 teaspoon turmeric
- 1 teaspoon chili powder
- 3 cups of water
- 1 onion, finely chopped
- ½ teaspoon chopped parsely
- 4 tablespoons of vegan butter
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 tomato, seeded and chopped
- ½ teaspoon coconut sugar
- ½ teaspoon thyme
- 2 teaspoons garam masala
- 1-2 tablespoons of coconut milk
- 2 tablespoons fresh coriander
- 1 teaspoon dill
- ½ teaspoon mustard seeds
- Black Pepper
Instructions
- Cook the lentils with salt, turmeric, chili and water for about 20 minutes until very soft. Drain. Cook the onion in vegan butter to a golden brown. Set aside 1 tablespoon for garnish. Ass the garlic and ginger and cook briefly, then add the tomato and cook until softened. Stir into the lentils along with the remaining spices, coconut milk and herbs.
