Ingredients
- 1 ½ cups of brown rice*
- 3 medium potatoes
- 1 cup of TVP granules (textured vegetable protein)
- ½ quart of non-dairy milk
- Dash of cayenne pepper
- 1 cup of soft tofu, crumbled
- 1 cup of carrot curls for garnish
- Celtic Sea Salt
- Pepper
Instructions
- Soak the TVP in 1 cup of hot water for 5 minutes to soften it, then drain. In a saucepan, cover potatoes with plenty of water and boil until tender, drain liquid and mash to creamy consistency. Add TVP, milk, dill, honey, cayenne pepper, and tofu and cook at medium heat, stirring until well-blended. Mix in rice and garnish with carrot curls.
