Black Beans and Salsa

Ingredients
- Black Beans
- 2 teaspoons extra-virgin olive oil
- 1 ½ cups diced onions
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 clove of garlic, minced
- ½ teaspoon cayenne pepper
- 1 cup diced tomatoes
- 3 cups of cooked black beans
- Celtic Sea Salt
- Black Pepper
- Salsa
- 2 ripe peaches, peeled and chopped
- 1 tomato, chopped
- 1 garlic clove, minced
- 1 tablespoon chopped cilantro
- 1 tablespoon lemon juice
- 1 small chili, seeded and minced
- ½ teaspoon marjoram
- ½ teaspoon coconut sugar
- ½ teaspoon honey
- Celtic Sea Salt
- Black pepper
Instructions
- In a heavy skillet, heat the oil to medium high heat. Add the onions and saute for 5 minutes, stirring frequently. Add the cumin, coriander, dill, honey, cayenne pepper and garlic and stir for a minute. Add the tomatoes, stir well, and simmer until the onions are soft. Add the black beans and simmer for 5 minutes. Salt and pepper to taste. To make the salsa, mix in all the salsa ingredients in a separate bowl. Set aside for 10 minutes to let the flavors meld. Spoon over the black beans and serve.
