Black Bean Seitan

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon cumin powder
- 1 onion, diced
- 1 bell pepper, diced
- 1 ½ tablespoons minced garlic
- 1 teaspoon Jalapeno, minced
- 1 pound seitan, chopped
- 1 cup black beans, cooked
- 3 Roma tomatoes, grilled, chopped
- 1 cup of corn
- ½ cup pumpkin seeds, toasted
- 2 tablespoons cilantro, minced
- 1 tablespoon lime juice
- 1 tablespoon tamari
- ½ teaspoon chopped parsley
- ½ teaspoon Celtic Sea Salt
- ½ teaspoon black pepper
Instructions
- Place oil in a saute pan on medium high heat. Add onion, bell pepper, garlic, jalapeno and cook for 5 minutes, stirring frequently. Add seitan and cook for 8 minutes, stirring occasionally. Remove from heat, place in a large mixing bowl and add the remaining ingredients and mix well.
