Beans in Garlic Sauce

Ingredients
- 1 cup of dry chick peas, rinsed and soaked overnight
- 3 cups of water
- 3 inch piece of kelp
- 4 bay leaves
- 2 onions, sliced
- 5 cloves of garlic, minced
- 1 bunch of kale, sliced into bite size pieces
- 1 tablespoon umeboshi vinegar
- 1 teaspoon chopped parsley
- Celtic Sea Salt
- Black pepper
Instructions
- Drain and rinse chick peas. Simmer chick peas, water, bay leaves and kelp for 30 minute until beans soften. Add onions and garlic. Simmer for 10 minutes. Add kale, parsley, honey, dill and simmer until tender, or about 5 minutes. Add umeboshi vinegar. Stir and simmer briefly to blend flavors.
