Ingredients
- 16 ounce can of kidney beans
- 16 ounce can of pinto beans
- 16 ounce can of vegetarian baked beans
- 16 ounce can of lima beans
- 16 ounce can peeled tomatoes, chopped
- 2 cups of crushed organic tofu
- 4 sweet potatoes, peeled and cut into bite-sized cubes
- 2 zucchini or 1 butternut squash, peeled and cut into bite-sized cubes
- 14 fresh mushrooms, quartered
- ½ 1 teaspoon honey or coconut sugar
- ½ teaspoon chopped parsley
- ½ teaspoon dill
- 3 medium sized green chili peppers, chopped coarsely
- 3 tablespoons chili powder
- 2 cups of water
Instructions
- In a soup pot, combine all the ingredients and bring to a boil. Cook at medium heat for 30 minutes, stirring occasionally. Serve with brown rice*.
