Ingredients
- ½ cup brown lentils soaked for 1 hour
- 1 onion, finely chopped
- ½ teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 fresh green chili, seeded and chopped
- ½ teaspoon chopped parsley
- ¼ teaspoon ginger
- 2-3 Tablespoons of ghee, coconut oil or EVOO
- 1 cinnamon stick
- 2 cloves
- 1 bay leaf
- ½ teaspoon turmeric
- 1 teaspoon Celtic Sea Salt
- 1 cup brown rice*, soaked for 1 hour
- ½ cup red lentils
- 2 tablespoons chopped green onion
- 1-2 teaspoon honey, maple syrup or coconut sugar (optional)
- ½ teaspoon cumin
- Black pepper
Instructions
- Drain the brown lentils, cover with boiling water and boil for 15 minutes until beginning to soften. Drain.
- Cook the onion, garlic, ginger and chili in the oil until soft and lightly colored. Add the cinnamon cloves, bay leaf and turmeric.
- Add the remaining spices and the sweetener. Cook for 2 minutes, stirring.
- Add the drained rice and lentils, mix well, then add water to cover. Bring to a boil, then cook on low heat until the liquid has been absorbed, about 20 minutes.
- Stir in the chopped green onion. Remove cinnamon stick, cloves and bay leaves before serving.
