Bhakti’s Broccoli Bisque

In the spirit of our favorite DNA-whisperer broccoli, my favorite creamy beautifully green and simple soup. From Vegan Fusion World Cuisine cookbook.
Ingredients
- 5c filtered water
- 3 1/2c broccoli flowerettes
- 1 med onion, chipped
- 1 c cashews, roasted
- 1/2 c celery, sliced thin
- 1 T garlic minced
- 2 tsp celtic sea salt, or to taste
- 1 tsp dill, fresh minced, or 1/2 tsp dry
- Pinch crushed red pepper flakes/black pepper ground to test/shoyu to taste
Directions
1. Cook broccoli, onion, celery and garlic in filtered water until vegetables are just soft, up to 20 min.
2. Remove from heat, allows to cool 10-15 min and blend in a Vita-Mix or another blender. Add cashews gradually as you blend. Blend in batches and fill the blender only half full. Start with low speed and increase it gradually.
