Zucchini Rice Salad

Ingredients
- 1/2 cup brown rice
- 2 small zucchini, grated
- 1 tomato, cut in wedges
- 1 red bell pepper, cut in strips
- ½ bunch of spinach, torn
- 1 avocado, in chunks
- 1 teaspoon chopped parsley
- 1 teaspoon chopped basil
- 1 teaspoon chopped thyme
- ½ teaspoon Celtic Sea Salt
Instructions
- Cook the rice, cool and chill. Mix all the ingredients together and toss in favorite dressing.
