Whole Grain Pancakes

Ingredients
- 1 cup of apple juice
- 4 teaspoons extra-virgin olive oil
- ½ cup of teff flour
- ½ cup rice flour
- 1/3 cup of arrowroot powder
- 4 teaspoons baking powder
- ¼ teaspoon Celtic Sea Salt
Instructions
- Mix the oil, honey, molasses, vanilla and apple juice in a mixing bowl. In a separate bowl mix the rest of the dry ingredients. Oil a skillet and bring it to medium-high heat. Add the dry ingredients to the wet ingredients and mix well with enough juice to give it a good consistency. Start making the pancakes immediately. Watch for bubbles appearing before turning over and cooking the other side while flattening each pancake. Add fruit and jam to compliment.
