Watercress Soup

Ingredients
- 1 bunch of watercress
- ¾ cup of baked tofu, cut into ½ inch slices
- 3 ½ cups of water
- 1 ½ teaspoons vegetable seasoning
- ½ teaspoon Italian seasoning
- 1 teaspoon of extra-virgin olive oil
- Tamari sauce
Instructions
- To bake the tofu, place ½ inch thick slices on cookie sheet and bake at 350 degrees for 20 minutes or until golden yellow in color. Boil water in medium pot, add all the ingredients, and cook for 1 minute. Remove pot from heat, let stand for 2 minutes and serve.
