Vegetarian Mushroom Gravy

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 onion, diced
- ¾ cup shiitake mushrooms, sliced thin
- 1 ½ tablespoons garlic, minced
- 2 cups of water
- ¼ cup tamari
- ½ teaspoon chopped parsley
- Pinch of nutmeg
- Pinch of cayenne pepper
- 2 tablespoons spelt flour
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon water
Instructions
- Create a roux by placing the flour and 2 tablespoons of oil in a bowl with 1 tablespoon of water. Whisk and set aside. Place 1 tablespoon of oil in a large pan on medium high heat. Add onion and garlic, cook for 5 minutes, stirring occasionally. Add mushrooms and cook for 5 minutes. Add remaining ingredients except for the roux and cook for 5 minutes on low heat. Ad roux and cook until gravy has thick consistency, approximately 10 minutes.
