Vegan Egg Salad

Ingredients
- 1 pound firm tofu, crumbled
- ¾ cup celery, diced
- ½ cup onion, diced
- ½ cup of vegan mayonnaise
- 1 tablespoon dill, minced
- 2 ½ teaspoons stone ground mustard
- 1 ½ teaspoons apple cider vinegar
- 1 teaspoon turmeric powder
- ½ teaspoon garlic, minced
- ½ teaspoon chopped parsley
- Black pepper
- Celtic Sea Salt
- 2 ½ tablespoons tamari
Instructions
- Combine all the ingredients in a large mixing bowl and gently mix well. Chill for several hours before serving.
