Vanilla Tofu Ice Cream

Ingredients
- 10ounces soft tofu
- 3/4cup maple syrup
- 2 tablespoons arrowroot powde
- 6 teaspoons vanilla
- 1 teaspoon guar gum
- Several dashes of Celtic Sea Salt
- ¼ cup raw cashew pieces
Instructions
- Combine all the ingredients in a food processor or blender and freeze solid. Defrost for 10 minutes and use a food processor to mix thoroughly. Freeze a second time. Remove from freezer, let stand a few minutes before serving. Add fruit or carob topping.
