Tofu Whipped Cream

Ingredients
- 8 ounces very soft or regular plain tofu
- 6 tablespoons maple syrup
- 2 teaspoons vanillla
- ½ teaspoon coconut sugar
- 3 teaspoons arrowroot powder
- 2 dashes of cinnamon
Instructions
- Rinse the tofu in cold water and press between several layers of paper or clean cloth towels to squeeze out all the water possible. Break the tofu into small pieces or mash it, and put it in the blender or food processor. Add the remaining ingredients and blend. Taste and adjust the seasonings if desired, then blend again as necessary. Add an optional thickener as desired. Chill and serve.
