Tofu Rarebit

Ingredients
- 16 ounces of regular tofu
- 2 cups of tomato sauce
- ½ teaspoon maple syrup
- 2 teaspoons tamari
- ½ teaspoon Celtic Sea Salt
- ½ teaspoon paprika
- Several dashes of cayenne pepper
- 3 tablespoons extra-virgin olive oil
- 1 small onion, chopped
- ½ teaspoon nutritional flakes
- 3 stalks of celery or green pepper chopped
- 2 cups of mushrooms, sliced
- 12 black olives
- ½ teaspoon oregano
- ½ teaspoon rosemary
- ½ teaspoon honey
- 8 slices whole grain toast
- For garnish: parsley, avocado, lemon wedges, extra olives
Instructions
- Blend the tofu, sauce and all the seasonings until fairly smooth. Heat the mixture on medium-low heat until bubbling hot. While the sauce is heating, prepare the sautéed vegetables and toast. Heat the oil and saute the onion and celery or green pepper until semi-tender. Then add the mushrooms and olives and continue to saute until everything is as tender as you like it. Place the warm toast on a dinner plate, cover with the sauce and sautéed vegetables, and garnish. Eat this dish with a knife and a fork.
