Tofu French Toast

Ingredients
- 8 ounces tofu, crumbled
- ¾ cup non-dairy milk
- 2 tablespoons extra-virgin olive oil
- 4 teaspoons liquid sweetener
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- Several dashes of Celtic Sea Salt
- Sliced whole grain bread
Instructions
- Blend all the ingredients together in a blender (except bread). Heat a well-oiled skillet over medium high heat. Dip the bread in the tofu mixture and place several slices in the pan. Cook a few minutes on each side until lightly browned. Re-oil the pan after each batch. Serve with fruit, nuts and jam toppings.
