Tofu Cheesecake

Ingredients
- 1 ½ pounds soft tofu
- 1 cup of maple syrup
- ¼ cup brown sugar
- 3 tablespoons extra-virgin olive oil
- 4 tablespoons arrowroot powder
- 3 tablespoons grated lemon rind
- 2 teaspoons guar gum or xantham gum
- 1 teaspoon vanilla
- 1 teaspoon honey
- 1 teaspoon coconut sugar
- ½ teaspoon cinnamon
- 14 drops of orange flavoring (optional)
- 1 pie crust shell
Instructions
- Mix all the ingredients together, except the pie crust, in a food processor. Line a 10 inch pie plate with the crust. Preheat the oven to 350 degrees. Spread the tofu mixture evenly in the pie crust and smooth out on top. Bake for 45 minutes or until the cake is set and turns a medium golden color. Chill thoroughly and serve with a strawberry topping if desired.
