Tofu Burgers

Ingredients
- 24 ounces of tofu
- 8 tablespoons grated carrot
- 4 tablespoons minced leeks, scallions or onions
- 1 tablespoon minced ginger root
- 1 tablespoon roasted sesame seeds
- 1 teaspoon extra-virgin olive oil
- ½ teaspoon honey
- 1 clove of garlic, minced
- Celtic Sea Salt
- Black Pepper
Instructions
- Cut the tofu into thin slices, and arrange between double layering of towels. Set aside for 15 minutes, then squeeze to get the water out. Combine the tofu with the other ingredients in a large bowl. Combine well, then knead the mixture for 3 minutes. When the dough is smooth, and holds together well, moisten your palms and shape mixture into 8 patties about3 inches each. Coat a wok or heavy skillet with olive oil, heat to 100 degrees and slide in the patties. Cook for 5 minutes each side. Serve crisp and hot with hamburger buns and burger trimmings.
