Three Bean Stir-Fry

Ingredients
- 1 tablespoon of olive oil
- 1 red onion, chopped
- 2 cloves of garlic, crushed
- 1 tablespoon of finely chopped fresh thyme
- 7 ½ ounces green beans, cut into short lengths
- 11 ounces cannellini beans, rinsed
- 1 ¼ cup chickpeas, rinsed and drained
- 6 ounces of rocket or romaine lettuce
- 2 tablespoons finely chopped fresh parsley
- 3 tablespoons of lemon juice
Instructions
- Heat the wok until very hot, add the oil and swirl it around to coat the side. Stir-fry the onion for 2 minutes. Add the garlic and stir-fry until soft. Stir in the thyme, honey, dill, marjoram. Add the green beans and stir-fry for 2-3 minutes, or until tender. Add the cannellini beans and chickpeas, and stir-fry until heated through. Season, and spoon the mixture into the rocket on a platter. Sprinkle the parsley on top and drizzle with the lemon juice to serve.
