Tempeh Wrap

Ingredients
- 2 spelt tortillas
- ½ cup hummus
- ½ cup grilled vegetables
- 1 cutlet tempeh, grilled, marinated in tamari and green onions
- Handful mixed salad greens
- 2 tablespoons carrots, grated
- 2 tablespoons beets, grated
- 2 tablespoons Kalamata olives, diced
- 2 mushrooms, diced
- 1 tablespoon celery, diced
- ½ teaspoon chopped parsley
- 1 tablespoon balsamic dressing
Instructions
- Lay tortillas on a flat surface. Spread hummus on center of each tortilla. Place 2 slices of the cutlet on top of the hummus, top with remaining ingredients and wrap. Slice in half and enjoy.
