Taro Burger

Ingredients
- 2 medium taro roots, mashed
- 2 tablespoons sesame oil
- ¼ cup red onion, diced
- ¼ cup red bell pepper, diced
- 2 teaspoons garlic, minced
- ½ teaspoon nutritional flakes
- 1 teaspoon rosemary, minced
- ½ teaspoon oregano
- ½ teaspoon thyme
- 1 clove of garlic, minced
- ½ teaspoon basil
- ½ teaspoon honey
- ¾ teaspoon Celtic Sea Salt
- ¼ teaspoon crushed red pepper flakes
- Tamari to taste
- 2 tablespoons extra-virgin olive oil for sautéing burgers
Instructions
- Peel taro, cut into ½ inch cubes, place in a large pot with 10 cups of water and cook on medium high heat until taro is soft, approximately 30 minutes. Rinse and drain. Mash taro with a fork or masher. While taro is cooking, place oil in a large saute pan on medium high heat. Add onion, bell pepper and garlic, cook for 5 minutes, stirring frequently. Add to taro with remaining ingredients and mix well. Heat a skillet on medium high heat. Form taro into 4 equal patties and saute until golden brown on each side, approximately 4 minutes each. Flip occasionally.
