Ingredients
- 1 cup of bulgur
- 2 cups of water
- 2 tomatoes, finely diced
- 1 bunch of scallions, without tops, finely chopped
- 3 tablespoons fresh mint, chopped
- ¼ cup fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- ¼ teaspoon black pepper
- ¼ teaspoon dried oregano
- ¼ teaspoon ground cumin
- ¼ teaspoon allspice
- ¼ teaspoon turmeric
- ½ teaspoon marjoram
Instructions
- Bring the water to a boil. Pour into a medium sized bowl, and soak the bulgur for an hour. Drain the bulgur well, pressing out the excess water. Add the tomatoes, scallions, parsley, and mint to the bulgur. Combine all the ingredients well. Set aside.in a small bowl, combine the lemon juice, marjoram, oregano, oil, pepper, cumin, allspice, turmeric and coriander. Add t the bulgur mixture, marinate for 1 hour before serving.
