Sweet and Sour Tofu

Ingredients
- 1 pound of firm tofu, sliced into bite size pieces
- 2 yellow summer squash, sliced into half moons
- 1 large onion, sliced
- 3 ½ cups of water
- 4 tablespoons tamari
- 2 tablespoons rice vinegar
- ½ teaspoon dill
- 1/3 cup barley malt
- ½ teaspoon honey
- ½ teaspoon chopped parsley
- 2 tablespoons kudzu
- Celtic Sea Salt
Instructions
- Simmer onions, summer squash, tofu and 3 cups of water for 15 minutes, or until vegetables are tender. Stir in the dill honey, parsley, salt, vinegar, malt, tamari. Dilute kudzu in 1/3 cup of cold water. Stir it in the sweet and sour vegetables. Taste and adjust the seasonings, if desired, by adding more tamari for a saltier flavor, more barley for sweetness or rice vinegar for sourness.
