Stuffed Peppers

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 small onion, chopped
- 1 clove of garlic, chopped
- 12 ounces of tofu, squeezed and mashed
- 2 cups of brown rice
- 1 tablespoon oregano
- ½ teaspoon basil
- ½ teaspoon rosemary
- ½ teaspoon thyme
- ½ teaspoon dill
- Celtic Sea Salt
- Black Pepper
- 6 large red or green peppers
Instructions
- Heat the olive oil and saute the onions and garlic until they are translucent. Add the crumbled tofu, brown rice, herbs sugar. Cook these ingredients for 5 minutes stirring constantly to avoid burning the onions. Add the salt and pepper and set aside to cool. Cut the bottoms of the peppers, remove the seeds, and wash the peppers. Fill the peppers with the tofu mixture and steam for 15 minutes or until stuffing is heated through. Remove the peppers from the steam, cut into wedges, and arrange nicely on a plate. Serve with tomato or miso sauce.
