Strawberry Pie

Ingredients
- Pie crust
- 1 ½ cups of spelt flour
- ¼ teaspoon nutmeg
- ½ cup of toasted and ground almonds
- 1/3 cup extra-virgin olive oil
- 1/3 cup of maple syrup
- ¼ teaspoon Celtic Sea Salt
- The filling
- 1 pound of tofu
- ½ cup of rice syrup
- 1 tablespoon vanilla
- 1 tablespoon tahini
- 10 strawberries, rinsed
Instructions
- Preheat oven to 375 degrees. Mix up pie crust and press into pie pan, place holes in the crust with a fork, bake for 10 minutes. Blend all the filling ingredients except the strawberries in a food processor until creamy. Pour the filling into the pie crust and bake for 10 minutes or until tofu is a golden color.
