Stir-Fried Soba Noodles

Ingredients
- 16 ounces of soba noodles
- 6 dried black mushrooms, sliced
- 1 ¼ cup of bean sprouts
- 1 cub of cabbage, sliced
- ½ cup of organic baby corn
- 4 tablespoons of extra-virgin olive oil
- 2 tablespoons of tamari
- 2 ½ cups of water
- Celtic Sea Salt to taste
- Fresh coriander or cilantro
Instructions
- Prepare the noodles by submerging them in hot water for 15 minutes, drain and set aside. Heat a large frying pan to medium-high heat, add oil to hot pan, then add all the ingredients except noodles. Stir-fry evenly for 5-7 minutes, stir in noodles, mix well, and cook for another 3-5 minutes. Serve on a platter, garnished with coriander and cilantro.
