Spring Tabouli

Ingredients
- 4 1/2cups of water
- 3 cups of spelt cous
- ½ teaspoon Celtic Sea Salt
- 1 red onion, sliced
- 1 large carrot, sliced into matchsticks
- 1 bunch of parsley, chopped
- Juice of 2 lemons
- ½ cup extra-virgin olive oil
- 1 tablespoon fresh chopped oregano
- ½ cup of pitted olives
- ½ teaspoon rosemary
- ½ teaspoon honey
- ½ teaspoon thyme
- Black pepper
Instructions
- Boil water with a pinch of salt and add spelt cous. Simmer for a few minutes until all water is absorbed. Transfer hot grain to a large mixing bowl and cool. Then add the carrots, onions, lemon juice, parsley, honey, thyme, rosemary and olive oil. Stir in salt and pepper and oregano. Garnish with olives.
