Spinach Soup

Ingredients
- 3 cups of fresh spinach, cut in 2 inch pieces
- 1 ½ tablespoons TVP granules (textured vegetable protein)
- 6 fresh mushrooms, thinly sliced
- 4 cups of water
- 1 teaspoon of nutritional yeast
- 1 tablespoon vegetable broth powder
- 1 tablespoon fresh coriander, coarsely chopped
Instructions
- Soak the TVP in a little hot water for 5 minutes to soften it, then drain. Add the mushrooms and TVP to boiling water, then mix in all the ingredients and turn off the heat. Serve immediately.
