Spinach Lasagna

Ingredients
- 1 box of rice lasagna noodles
- 1 box of frozen spinach, thawed
- 1 pound of tofu
- 16 ounce can crushed tomatoes
- ½ teaspoon honey
- ½ teaspoon of Celtic Sea Salt
- ½ teaspoon of black pepper
- 1 teaspoon of dill
- 1 teaspoon of marjoram
- ½ teaspoon oregano
- ½ teaspoon thyme
- ½ teaspoon rosemary
- 1 teaspoon of Italian seasoning
- 1 green pepper, diced
- 6 stalks of celery, diced
- 3 tomatoes, diced
- 1 jar of spaghetti sauce
- Parmesan cheese (optional)
Instructions
- Preheat oven to 350 degrees. Cook the noodles in a large pot, drain, rinse, set aside. In a large mixing bowl, combine all the ingredients except the spaghetti sauce and the cheese. Layer noodles and filling in a lightly oiled large baking pan, starting with a layer of noodles and then a layer of filling, and then a layer of spaghetti sauce. Cover with cheese. Bake for 45 minutes or until done all the way through.
