Spiced Bulgur and Beans

Ingredients
- 1 ¼ cups of bulgur
- 1 tablespoon extra-virgin olive oil
- ½ cup chopped green onion
- ½ green bell pepper, diced
- 2 cups of water
- 2 large tomatoes, chopped
- 1 cup of cooked red beans
- 1 clove of garlic, minced
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon rosemary
- 1 teaspoon paprika
- Cayenne Pepper to taste
Instructions
- Cook the red beans. Saute the bulgur in the oil until golden. Add the remaining ingredients, including the cooked red beans. Cover and bring to a boil. Reduce the heat and simmer for 15 minutes, adding more hot water as necessary.
