Ingredients
- Wet ingredients
- 1 cup of maple syrup
- 1 ½ cups of nut milk
- 2/3 cup of extra-virgin olive oil
- 2 tablespoons of lecithin
- 2 teaspoons of vanilla
- ½ teaspoon grated ginger
- ½ teaspoon molasses
- 1 teaspoon honey
- Dry ingredients
- 2 spelt flour
- 1 cup of kamut flour
- ½ cup of brown sugar
- 3 tablespoons powdered egg replacer
- 2 tablespoons arrowroot powder
- 4 ½ teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon coconut sugar
- 1 teaspoon nutmeg
- ½ teaspoon ground cloves
- 2 tablespoons gluten flour
- ½ cup chopped raw nuts
Instructions
- Preheat the oven to 350 degrees. Mix the wet ingredients together. Sift the dry ingredients into a separate bowl. Slowly stir the dry ingredients into the wet ingredients and beat until smooth. Stir in the nuts last. The mixture should be very thick and barely pourable. Add extra flour or nut milk accordingly. Lightly oil and flour cake pans and scoop in the batter. Bake for 65 minutes until brown or a toothpick comes out clean. Cool the cake before removing and frosting.
