Spelt Vegetable Burgers

Ingredients
- ½ cup parsnips or small turnips, chopped small
- ½ green pepper, chopped small
- ½ cup of mushrooms, chopped small
- 1 1/2 cups spelt flour
- 1 cup ground sunflower seeds
- 2 tablespoons arrowroot powder
- ¾ cup of onion
- 1-2 cloves of garlic, minced
- ½ cup of water
- 4 tablespoons extra-virgin olive oil
- 3 teaspoons dried parsley
- ½ Celtic Sea Salt
- ½ teaspoon basil
- ½ teaspoon oregano
- ½ teaspoon honey
- 4 teaspoons tamari
Instructions
- Steam the vegetables, except the onions and garlic, until tender, then mash them and add them to the remaining ingredients. Form the mixture into 8-12 burgers and lightly coat watch one with extra flour. Cook them on medium-low heat for several minutes on each side until nicely browned. Serve with ketchup, mustard, relish and bun.
