Spanish Pilaf

Ingredients
- 2 cups of water, boiled
- 1 cup of quinoa, rinsed
- Celtic Sea Salt
- 1 tablespoon extra-virgin olive oil
- 3 cloves of garlic, minced
- 1 red onion, diced
- 1 cup of kidney beans
- Pint of salsa
Instructions
- Boil water. Dry roast the quinoa and sea salt. Add oil. Stir in one at a time: garlic, red onion, kidney beans. Turn off heat. Add the boiling water. Simmer for 10 minutes. Serve topped with salsa, with bright green broccoli on the side.
