Ingredients
- Dry ingredients
- 2 cups of kamut flour
- 2 cups spelt flour
- 2 tablespoons powdered egg replacer
- 2 tablespoons arrowroot powder
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon Celtic Sea Salt
- 3 teaspoons gluten flour
- 1 teaspoon coconut sugar
- Wet ingredients
- 1 ½ cups of water
- 4 tablespoons maple syrup
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoon liquid lecithin
- ½ teaspoon honey
- ½ teaspoon vanilla
- ¼ cup ground raw cashews
Instructions
- Preheat the oven to 375 degrees. Stir the dry ingredients together. Blend the wet ingredients with the nuts. Slowly add the dry ingredients to the wet and mix with spoon or fork. As the batter stiffens, mix with your hands. Knead 1-2 minutes on a flat surface. Shape the loaf into a round shape for an 8 inch shallow baking pan or into a loaf pan. Rub a little extra oil over the loaf while shaping. Lightly oil and flour the pan. Bake for 60 minutes. Cool 5 minutes. Remove from pan and cool another 30 minutes before slicing.
