Ingredients
- 1 pound soy grits or ground soybeans
- 2 tablespoons extra-virgin olive oil
- 2 onions, chopped
- 2 green peppers, chopped
- 1 tomato, chopped
- 2 tablespoons tamari
- 3 teaspoons chili powder
- 1 teaspoon Celtic Sea Salt
- Several dashes of cayenne pepper
- ½ cup of pickles, chopped
- 4 cups of tomato sauce
- Whole grain buns
Instructions
- Use real soy grits if available. If soy grits are not available use a food processor to grind soybeans. Soak and cook the soy grits until tender. In a large skillet or pot, heat the oil and saute the onions until semi-tender, add the green peppers and tomato and saute another minute until everything is tender. Drain the hot bean bits and add them to the sautéed vegetables along with herbs, spices and tamari. Cook on medium-low heat for 5 minutes, stirring frequently. Then add the sauce and simmer everything on low heat, covered for 50 minutes while the flavors mingle and develop. Serve ½ cup or more of the mixture on a bun and eat carefully with a knife and a fork.
