Shanghai Tofu

Ingredients
- 1 pound of tofu, marinated, grilled, cut into ½ inch cubes
- 2 tablespoons sesame oil
- 1 onion, diced
- 2 tablespoons ginger, minced
- ¼ cup red bell pepper, diced
- 1 cup of water
- 16 ounces apricot preserves
- 2 tablespoons arrowroot powder, dissolved in a ¼ cup of cold water
- 5 tablespoons tamari
- 2 tablespoons apple cider vinegar
- 1 tablespoon miso paste
- 1 tablespoon mirin
- ½ teaspoon sea kelp
- ½ teaspoon chopped parsley
- ½ teaspoon nutritional yeast
- ¼ teaspoon crushed pepper flakes
- 2 teaspoons cilantro, minced
- 2 teaspoons sesame seeds
Instructions
- Place sesame oil in a pot on medium heat. Add onion, ginger and bell pepper, cook for 3 minutes, stirring occasionally. Add water and apricot preserves, cook for 10 minutes, stirring occasionally. Add arrowroot and water mixture, stir for 2 minutes. Add remaining ingredients except tofu, cook for 3 minutes and add tofu. Garnish with sesame seeds.
